The inn offers various menus that changes with the seasons based on market availability and the chef's inspiration.

 

But fine dining greets the rising sun at La Pinsonnière since we offer homemade pastries for breakfast and small fresh salads and grilled dishes at noon (in summer).

 

The discrete, attentive service rounds out the epicurean experience of a meal at La Pinsonnière, set in the elegant dining room featuring paintings by renowned artists and the simple majesty of the St. Lawrence River.

Simon BouchardBorn at the peak of fall harvest, our young new Chef at La Pinsonnière is happily savouring the table set for him in the rich terroir of Charlevoix. The land here whispers and the river inspires. His new home delights and challenges his imagination to draw on local culinary tradition and the mastery of stock breeders, market farmers, cheese makers, craft bakers and other passionate producers of fine food.

His cuisine is replete with stories from town and country. After graduating in food services management from Quebec's tourism and hotel institute in 2003, he followed his muse across the water to the Magdalen Islands, where his quest for flavours from the sea was nurtured and refined. The Lower St. Lawrence region bestowed his first opportunity as Chef, in the kitchen of a distinguished inn celebrated far and wide for its regional gastronomy. His fundamental vision is purity on the plate, balance in the ingredients, respect for the environment, authentic yet healthy flavours, refined simplicity and uncompromising honesty.

Simon takes pride in creating Quebec cuisine! His origins, overlapping influences, history, the salt water in his veins, his northern sensibility, culture, attunement to the seasons, the treasures in his pantry, and his love of fine wine have all contributed to his maturation as an accomplished culinary artist."
